Jam Squares Recipe


1 stick of unsalted, softened butter
1/2 cup of sugar
1 tablespoon of vegetable oil
1 egg, well-beaten
2 teaspoons vanilla extract
2 cups of flour
2 teaspoons baking powder
pinch of salt
1 jar of Carol Hall's Jam (any flavor)

In a large bowl, cream butter, sugar and oil. Add egg and vanilla.

In separate bowl, mix dry ingredients, whip together to aerate. 

Now add egg mixture and mix well - until dough begins to form a ball - should be quite firm. 

Wrap in wax paper and freeze for about half an hour or chill for one hour.

Preheat over to 350* and grease a 10x7 pan.

Press one half of the mixture of dough evenly on bottom of pan. Spread jam over the top.

Grate remaining dough evenly over the top of the jam.

Bake 40 minutes or until top is golden brown and sides have pulled away. 

Cool 20 minutes and cut into squares.
