BBQ Ribs

Pork or Beef Ribs 4-6One bottle of Carol Hall's BBQ SauceSalt & Pepper Place Ribs in covered roasting pan. Salt and pepper to taste. Pour BBQ sauce over ribs, cover and bake in 325* over for three hours. Adding water during cooking if needed. Serve with Grilled Vegetables and Potato Salad.

Chicken: Sweet & Hot

1 whole chicken1/2 cup of butter1/4 cup of Worcestershire sauce1 large garlic clove1/2 cup of Carol Hall's Hot Pepper Jelly (flavor of your choice!)1 tablespoon dijon mustard1 cup orange juice1 tablespoon powdered ginger3 dashes tabasco sauce Combine all ingredients in a sauce pan and heat until the Pepper Jelly is melted and sauce is smooth. Quarter chicken and place in baking pan. Pour sauce over and marinate 2-3 hours. Heat oven to 350*, bake one hour uncovered. Turn over to 400* and cook, basting, until chicken is brown. Serve with rice, peas and salad.

Smoky Garlic Vinaigrette

1/4 cup olive oil (your favorite brand)1 tablespoon balsamic vinegar2 teaspoons Carol Hall's Smoky Garlic Mustard1/3 teaspoon sugarPinch of salt Combine the five ingredients and mix thoroughly. Arrange crisp greens on a plate, crumble Gorgonzola cheese on top and drizzle your new vinaigrette over all.

Chicken Liver Pate Recipe

1/4 pound chicken livers4 large shallots2 tablespoon Fetzer Port Wine6 tablespoon butterCarol Hall's Red Pepper Jelly Saute livers in 3 tablespoons of butter until just done. Saute shallots in 3 tablespoons of butter until crisp and golden. Combine in food processor, add Fetzer Port Wine and mix until thoroughly blended. Oil a mold and spoon in pate. Refrigerate to set. Unmold and glaze with melted Red Pepper Jelly.  Serve with baguettes.

Jam Squares Recipe

1 stick of unsalted, softened butter1/2 cup of sugar1 tablespoon of vegetable oil1 egg, well-beaten2 teaspoons vanilla extract2 cups of flour2 teaspoons baking powderpinch of salt1 jar of Carol Hall's Jam (any flavor) In a large bowl, cream butter, sugar and oil. Add egg and vanilla. In separate bowl, mix dry ingredients, whip together to aerate.  Now add egg mixture and mix well - until dough begins to form a ball - should be quite firm.  Wrap in wax paper and freeze for about half an hour or chill for one hour. Preheat over to 350* and grease a 10x7 pan. Press one half of the mixture of dough evenly on bottom of pan. Spread jam over the top. Grate remaining dough...
